My husband and I love pizza, like really really love it. Our pizza obsession reached new heights when I started making homemade dough and pizza pockets. Fancy and fun pizzas are great, truly – but not on theMondayest Monday! You know what I mean, we all have those days.

These days may look different for each of us, but what I love about this "recipe" is that it works for everybody! Children, college students, and those of us trying to adult. You can make these as basic as you want or amp them up with leftovers and seasoning. Honestly, my favorite is just marinara sauce with a whole lotta cheese (dairy-free, of course) then some pepper and dried basil to top it off.

The key to these English muffin pizzas is to toast the halves first, then pop them in the microwave with toppings. That way you'll have a crispy base to bite into. I hesitate to call this a recipe since it's so easy and flexible, but I really want to continue documenting what I eat on a daily basis – even if it's super simple.

When I shared my English muffin pizza on Instagram, I was blown away by how many of y'all grew up with these! Where was my memo? I guess I was busy with my bagel bites, ramen, and creamed corn haha.

  • 1 English muffin
  • Marinara sauce
  • Vegan mozzarella cheese

Instructions

  • Split and toast English muffin.

  • Spread a couple spoonfuls of marinara sauce over each half, then sprinkle with a handful of vegan cheese.

  • Microwave until melted, about 30 seconds to 1 minute.
