"From www.gingerbreadbagels.com. I am making these tonight, but needed to get the nutritional information. I left out the cinnamon, but added it to the recipe. This recipe does not have any oil, butter or pounds of sugar. In fact there’s only 1/4 cup of brown sugar."

  • 1 12 cups quick-cooking oats
  • 14 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 12 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 12 cup milk
  • 1 large egg, lightly beaten
  • 1 large mashed banana
  • 14 cup creamy peanut butter

directions

  • Mix together the quick cooking oats, light brown sugar, baking powder, kosher salt and ground cinnamon.
  • Add in the vanilla extract, milk and egg. Mix the ingredients together.
  • Then add in the mashed banana and peanut butter. Combine all of the ingredients.
  • Pour the mixture into a lightly greased 8 by 8 inch metal baking pan. Bake at 350 F degrees for 20 minutes.
  • Cut into squares and enjoy!

  1. Yummm...I really like these. I'm not gonna lie, they do taste healthy, but in a good way. Just sweet enough to be enjoyable and just the right balance of PB and banana flavors. I had to bake mine for about 35 mins., I used two smaller bananas that were on the edge. I'm looking forward to having one for breakfast with coffee. Thanks for posting the recipe.

  2. I have made quite a few breakfast bars through the years. This is the 1st I feel has the perfect flavor and such a satisfying consistency! I couldn't believe they were even better hours later than right out of the oven! The texture became PERFECT! Just enough bite! The second time I made them I made a double batch. I used one banana but since it was a double batch and I only had one banana I used apple sauce in the same measurement (appx.) I LOVED the applesauce /banana batch so much more because it tempered the banana flavor just enough so I could taste more nut flavor! Perfect now! I highly rec a double batch with 1/2 applesauce + 1/2 banana! I believe these are going to be an almost daily breakfast for our family. Oh-- I once added 1/2 handful of milk choc chips to a double batch--- just enough to make it wow without adding too much choc. It didn't detract from the oat bar at all and didn't make me wish for more choc either.

  3. I absolutely love this recipe, I found it on pinterest about a year ago and have made it several times since! They are so easy and quick to make! These are about 120 calories per square (and the squares are big!), are high in protein and fiber, and low in sugar and fat. I love to eat them for breakfast or as a post work-out snack. If you want to make them a little more yummy drop a few spoonfuls of strawberry jam on top before baking and they become PB&J bars! YUM!

  4. This is very good stuff!I used a smallpeach pineapple cup drained and mash.Added coconut, walnuts and some pecans on top.baked 30 min.yummy, and white chocolate chips.

There is a smilier square at a bake shop my husband likes and he has been bugging me for a while to recreate it. It turned out well, but whatever you do, do not add flour of any kind! I thought, oh a smidgen won't hurt.. how wrong I was I had to bake them for fifteen extra minutes and it just wasn't worth it. I think next time I will substitute honey for the peanut butter though to make it more similar to the bake shops square.

  3. I followed the suggestion to double the recipe, use one banana and approximately equal amount of applesauce. I also added about 1 cup of unsalted hulled sunflower seeds for extra protein and fiber. They added to the texture nicely as well. :)
