It is very easy to make multigrain bread in the bread machine. It is made with multigrain cereal which is made with oats, barley, wheat, quinoa, rye, and more. Some of them have flax seeds added or you can add them while mixing.

Multigrain bread ingredients

The multigrain bread ingredients are very basic and easily available in the pantry. Bread flour, whole wheat flour, brown sugar, salt, yeast, and multigrain cereal is what you will need.

The main ingredient is multigrain cereal. It is usually found in the cereal section of grocery stores. You will have to look at the hot cereals and you will be able to find a variety of 5-grain, 7-grain, or 10-grain multigrain kinds of cereal.

I have used one pouch of Better Oats brand 5-grain multigrain cereal with flax which is made with oats, quinoa, barley, wheat, and rye.

Instant yeast or bread machine will work well for this recipe.

How to make multigrain bread in a breadmaker?

Once you have all the ingredients, it is very easy to make the multigrain bread in the bread machine. It is best to weigh the flour using a digital food scale for consistent results.

Depending on your bread machine, put the wet and dry ingredients in the bread machine pan. I have added water, oil, sugar, salt, bread flour, whole wheat flour, multigrain cereal, and instant yeast in the order.

Now select the basic white bread cycle and the crust setting to 'light'. Select the loaf size to 1.5 lb and start the cycle. Now the bread machine will do the rest of the job of mixing, kneading, rising, and finally baking.

Step 1: Add all wet and dry ingredients in the bread machine pan.

Step 2: Watch the dough getting mixed and kneaded for about 5-10 minutes and add some water or flour if needed.

I usually remove the paddle after the final kneading is done and then allow the final rise followed by the baking phase. This makes a very tiny hole at the bottom of the bread instead of a bigger hole created by the paddle.

Once the bread is baked, remove the pan from the bread machine and invert it and shake it to remove the bread. Allow it to cool down completely before slicing it with an electric knife or a serrated bread knife.

Step 3: Bread is being ready once the cycle is complete.

Step 4: Let the bread cool down on a cooling rack.

Substitutions

This bread machine multigrain bread is very easy to make and uses only 7 ingredients. There are a few substitutions that can work well in case you do not have all the ingredients.

  • All-purpose flour - instead of bread flour, you can use all-purpose flour.
  • Multigrain cereal - I have used 5-grain multigrain hot cereal. There are other varieties available like 7-grain and 10-grain ones. You can use any of those.
  • Yeast - Instant yeast or bread machine yeast works fine in the bread machine. You can read more on which yeast to use in a bread machine.

Variations

You can easily adapt this recipe to your liking and make it as per your family's liking.

  • Multigrain rolls - this recipe can easily be adapted to make dinner rolls. Make the dough using the dough cycle and then roll them into dough balls and bake them after a final rise.
  • Bread flour - I have added 1 cup of whole wheat flour to the recipe but you can easily replace it with bread flour and not use any whole wheat flour.
  • Bake in the oven - You can use the dough cycle and make the dough and then bake in the oven for about 20-25 minutes at 350°F.
  • Seed bread - add seeds like pumpkin, chia, sunflower, etc to make multigrain seed bread. You can check out this seed bread recipe.

Equipment

I have made this multigrain bread in the 2 lb. Hamilton Beach Artisan bread maker and used the basic white bread cycle. This recipe should work well in any bread machine which can make a 1.5 lb loaf.

Once you remove the bread out of the bread machine pan, allow it to cool down completely on a cooling rack, and then slice it with an electric knife or a serrated bread knife.

How to store multigrain bread?

Multigrain bread can be stored at room temperature for 4-5 days. It is best to keep it in a bread box or in an air-tight container. It is not recommended to store the bread in the fridge as it loses its moisture and becomes dry.

If you want to store the bread for a longer time then you can slice the bread and then store it in the freezer. When you want to eat them, simply take out how many slices you need and then toast them in a toaster.

Top tip

Measuring the flour with a measuring cup can give inconsistent results as the cup can be tightly packed while scooping the flour. So it is best to weigh the flour for a consistent result.

  • 1 cup Water (240 ml, microwave 30 seconds)
  • 2 tablespoon Oil (30 ml)

Instructions

  • Place the wet and dry ingredients (water, oil, sugar, salt, flour, multigrain cereal, yeast) in the order required by your bread machine.

    1 cup Water, 2 tablespoon Oil, 2 tablespoon Brown sugar, 1 teaspoon Salt, 2 cup Bread flour, 1 cup Whole wheat flour, ½ cup Multigrain cereal, 2 ¼ teaspoon Bread machine yeast

  • Close the lid and select the "Basic" cycle, 1.5 lb size, and the preferred crust setting to "light".

  • The bread will be ready once the cycle completes.

  • Remove the loaf by inverting the pan and shaking it.

  • Place the bread on a cooling rack and allow it to cool down.

  • Once the bread is cooled down completely, slice it with a serrated bread knife or an electric knife.

Notes

  • Sifting and weighing the flour helps make the bread soft. Sifting is optional, however, weighing the flour gives consistent results.
